We pride ourselves in making some awesome artisanal cheeses. Most people don’t know we make more then chevre. We make McIntosh -- a cave aged goat cheese (goat cheddar / Manchego), Sandia Sunrise Smoked Gouda, New Mexico Virga (similar to Humboldt Fog), Jemez Spring (a cow milk version of Humboldt Fog), Happy Jack (Habanero Apricot Jack), Black Jack (4 peppercorn variety jack), green chile brie known as Valle Verde, Sangre de Cristo a chipotle brie, traditional goat brie and Manzano Blue Moon, a goat blue cheese. If you are a local in the Albuquerque area you should consider joining our amazing cheese club that gives you access to everything we make. Often you cannot find anything but our chevre in local stores.
